· 2 cups sushi rice and 2 cups water · 1/4 cup rice vinegar · 2 tablespoons sugar · 1 cucumber and 1 carrot sliced · 1 avocado, · 6 nori sheets · Sesame seeds, Wasabi (optional) and Soy sauce (optional)
Clean the rice properly and boil them until nearly cooked.
While the rice is cooking, whisk together the rice vinegar, sugar, and salt in a small bowl. Once the rice is cooked, let it cool slightly and Spread the rice out in a large shallow bowl.
Dip your fingers in the vinegar mixture to prevent them from sticking.
Place a nori sheet on a bamboo sushi mat and Spread a thin layer of rice over the nori sheet, leaving about 1 inch of space at the top. Arrange the cucumber, carrot, and avocado on top of the rice.
Roll the nori sheet up tightly, using the bamboo mat to help you and Cut the roll into 6-8 pieces.
Sprinkle with sesame seeds, wasabi and soy sauce if desired.
